2 Focus Your Health Moroccan Carrot Salad Ready in 20 minutes. Makes 6 servings. What you’ll need Vegetable peeler G Sh ra a t r e p r knife Cutting board Small bowl Medium bowl Measuring cups Measuring spoons Small bowl Ingredients 6 carrots, medium ½ onion, small 1 lemon, large 3 tablespoons canola oil 1 teaspoon curry powder ½ teaspoon salt ¼ teaspoon black pepper, ground ¼ cup raisins, dark or golden Ready in 20 minutes. Makes 10 servings. What you’ll need Small bowl Medium pot Measuring cups Stove top Spatula or spoon Ingredients 1 cup corn, fresh or frozen 4 cups water ¼ cup tapioca 28 ounces coconut milk 1/3 cup granulated sugar A pinch of salt Directions 1. Place tapioca pearls in a small bowl, cover with cold water by ½ inch and let stand. 2. Add coconut milk, corn kernels, sugar, and a pinch of salt to the pot and stir to combine. Bring to a boil and then simmer until corn is tender, about 10 minutes. Taste and adjust sugar and salt, if desired. 3. Stir tapioca pearls into the pot and simmer for 2 minutes. 4. Remove from heat to cool. Serve warm. Vietnamese Sweet Corn Pudding (Chè Båp) Directions 1. Rinse and peel carrots and onion. 2. Shred carrots with a grater. Dice onion. 3. Rinse lemon and cut in half. In a small bowl, squeeze juice. Discard seeds. 4. In a medium bowl, combine carrots and onions. 5. In a second small bowl, combine oil, curry powder, salt, pepper, and 2 tablespoons of the lemon juice. Mix well. Let marinate 5 minutes. 6. Pour liquid mixture over carrots and onions. Stir in raisins. Mix well. 7. For best taste, allow flavors to blend before serving. Let sit 15 to 20 minutes after you have mixed in the sauce in step 6. Chef’s tips ● Replace half of the carrot with grated jicama or apples. ● Serve as a colorful side dish for fish, poached chicken, or baked or broiled chicken legs. ● Layer onto a sandwich with lean turkey and fresh veggies, like cucumbers.

Focus Your Health 3 The Centers for Disease Con- trol and Prevention (CDC) has authorized booster doses of the Pfizer vaccine for children ages 12 to 17. CDC recom- mends that all children and teens 12 years and older get a booster shot five months after their first set of COVID-19 vaccines. You may be thinking, “Does my child really need another shot?” Here are five facts from the CDC. Your child may need more protection. The Omicron variant is causing a surge in COVID-19 cases. Many of these cases occur in children. The vaccine your child received is still working to protect them. But experts are seeing that this protection fades over tim T e h . is means your child’s immunity against COVID-19 may not be as strong as before. COVID-19 boosters should help improve protection against the virus. The booster can also reduce their chances of getting seriously ill. Booster shots are safe. The COVID-19 booster is the same Pfizer vaccine your child has What to know already received. The expected side effects are also the same. The most common side effects include: ● Pain at the injection site ● Headache ● Feeling tired ● F S e id ve e r effects are a sign that your child’s body is increasing its protection against the virus. These side effects are usually mild and go away in a few days. Severe reactions are rare. Some kids don’t experi- ence side effects at all. Booster shots can keep your family safe. If you have children younger than 12 years old, they won’t be able to get the COVID-19 booster at this time—but getting the booster can help protect your entire home. Booster shots can prevent kids from missing school and other activities. There’s no cost for booster shots. You won’t have to pay anything to get your child a COVID-19 booster. Consider going back to the place where your child received their last Pfizer vaccine dose. You can also ask your doctor or local pharmacy about where to find one. Focus Your Health 5 Did you know that smoking is not the most common cause of throat cancer? Most throat cancers are caused by human papillomavirus (HPV). HPV is a group of viruses spread through people having sex. Cases are on the rise. Here are five facts you should know. 1 HPV infections can be harmless, but some can cause cancer. Most HPV infections can be fought off by the immune system. Some types of HPV can be more harmful. Over time, it’s possible for HPV to cause changes to cells that may lead to throat (oropharyngeal) cancer. HPV may also cause cancer in other areas. 2 Most throat cancers are HPV-related. HPV is responsible for about 36,000 NEW cancer diagnoses each about HPV and throat cancer year. The number of new cases is rising. 3 Throat cancer can cause noticeable symptoms. A long- lasting sore throat, hoarseness, swollen lymph nodes, earaches, painful swallowing and unexplained weight loss could be signs of throat cancer. If you notice them, let your primary care provider know. 4 HPV-related cancers can be prevented. There is an HPV vaccine that protects against HPV-related cancer. But immunization needs to happen in childhood, well before a person becomes sexually active and has contact with HPV. The Centers for Disease Control and Prevention recom- mends the HPV vaccine for all 11- or 12-year-olds. Kids this age need two doses, given 6 to 12 months apart. Teens and adults 26 and under who were not vaccinated by age 12 can still be immunized. Those who get their first shot at age 15 or beyond need three doses, given over six months. Ask your child’s primary care provider when your child should be immunized. 5 Some adults may receive the HPV vaccine too. Adults over 26 have likely been exposed to HPV already, so the vaccine is less likely to be protective. However, immunization may make sense for certain adults ages 27 through 45. Talk with your doctor to decide if the benefits of getting vaccinated outweigh the risks of a new HPV infection. Additional source: National Cancer Institute 5 facts

The risk for breast cancer increases after the age of 50. 3. 7 out of 10 women in their 40s who died from breast cancer did not have a routine mammogram screening.* Getting called back after a mammogram is common and doesn’t mean you have breast cancer.
